WHere is a home-style version of a cocktail featured on the seasonal menu. Designed as a party-sized prepared mix that's packed with tastes of the festive period, which makes it excellent for your holiday party. Any leftover cordial to use in morning drinks, sweets, or to make additional servings of bikinis.
Bikini
Yields 10 servings
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Citrus Syrup: Place all the items into a pan, bring to a light boil, agitating until the sugar dissolves. Next, turn off the heat and let it to cool down fully. Decant into a clean bottle, seal and store chilled, it can be stored for up to four weeks.
For the Premix: Pour every liquid ingredients in a large bottle, leave to sit for 60 minutes, then pass it through best through a fine cloth, to ensure it's fully clarified.
When ready to serve: Pour 85ml from the cocktail base into a cocktail shaker containing ice, gently stirring carefully for a minute to chill. Strain to a frosted cocktail glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a quick spritz with the mandarin essence above the glass.
